Ingredients

2 teaspoons canola oil

1 clove garlic, minced

1 cup fresh broccoli, chopped

1 cup fresh baby spinach, chopped

6 medium carrots, cleaned and sliced into 1/4-inch pieces

1 medium green pepper, chopped

3 medium stalks celery, chopped

1 medium onion, chopped

2 cups cabbage, shredded

1 Tablespoons light soy sauce, if desired

1/2 cup of water, or so, to aid in cooking

Preparation

  1. Heat oil in large frying pan over medium heat.

  2. Add garlic and cook for about 2 minutes.

  3. Stir in next 8 ingredients.

  4. Add 2 Tablespoons water. Cover and cook 10-15 minutes, until tender, stirring occasionally.

  5. Add small amounts of water, as needed, throughout the cooking period to avoid burning vegetables.

  6. Add soy sauce, a few minutes before serving, if desired
