Ingredients

3 lbs russet potatoes, washed and chopped

1 C olive oil

6 cloves garlic, sliced thin

salt and pepper

Preparation

  1. Place potato chunks in pot covered with cold, salted water.
  2. Bring to a boil and cook until tender- about 25 min.
  3. Drain and mash by hand.
  4. When potatoes are nearly done cooking, heat olive oil and garlic slices in a skillet over medium-low heat until garlic is golden.
  5. Add garlic-oil combination to potatoes slowly.
  6. Stir after each addition until desired texture.
  7. Season generously with salt and pepper.
