Ingredients
3 lbs russet potatoes, washed and chopped
1 C olive oil
6 cloves garlic, sliced thin
salt and pepper
Preparation
- Place potato chunks in pot covered with cold, salted water.
- Bring to a boil and cook until tender- about 25 min.
- Drain and mash by hand.
- When potatoes are nearly done cooking, heat olive oil and garlic slices in a skillet over medium-low heat until garlic is golden.
- Add garlic-oil combination to potatoes slowly.
- Stir after each addition until desired texture.
- Season generously with salt and pepper.
