Ingredients
2 medium baking potatoes
Vegetable cooking spray
2 teaspoons olive oil
2 cloves garlic, minced
1/8 teaspoon salt
1/8 teaspoon ground red pepper
1/8 teaspoon paprika
Preparation
Cut potatoes into 2-x1/4-inch strips, place strips in a large bowl of ice water until slicing is complete. Drain potato strips; press between paper towels to remove excess moisture.
Coat a skillet with cooking spray; add oil. Place over medium heat until hot. Add potato strips, cook 10 minutes. Add garlic, and cook 10 to 15 additional minutes or until potato strips are lightly browed and tender, stirring frequently. Sprinkle with salt, pepper, and paprika.
