Ingredients

6 small round red potatoes, cut in half

Olive oil-flavored vegetable cooking spray

1 teaspoon olive oil

3 bay leaves

2 cloves garlic, peeled and cut in half

2 sprigs fresh rosemary

1/4 teaspoon coarsely ground pepper

1/8 teaspoon salt

Preparation

  1. Coat potato halves with cooking spray. Coat a 9-inch cast-iron skillet with cooking spray; add oil. Place over medium heat until hot; add potato, bay leaves, garlic, and rosemary, stirring lightly. Sprinkle with ground pepper and salt.

  2. Bake at 450 for 40 minutes or until potato is browned, stirring twice. Remove and discard bay leaves and rosemary.
