Ingredients

1.5C Rice (I used brown)

3C boiling salted water

1Tbsp chopped parsley

2tsp grated lemon peel

1/2 C (1 stick) butter (i used a bit more)

4 cloves garlic, crushed

1/2 lemon, sliced thin

1 tsp crushed dried oregano

1 bay leaf

10 oz (1 pkg) of frozen chopped spinach - dethaw in microwave a bit

1.5 lbs raw shrimp (deveined, take shells off)

Preparation

  1. Cook rice in salted water for 20 minutes or until tender and all water is absorbed. Stir in parsley, lemon peel, salt and pepper. Cover and set aside, keep hot.

  2. In large pan/skillet, combine butter, garlic, lemon slices, oregano, bay leaf, spinach & shrimp. Bring to a boil to melt butter and cook stirring frequently until shrimp turns pink (approx 5 min)

SERVE OVER RICE!
