Ingredients

2 medium potatoes

4 - 6 strips bacon

3 eggs

1/2 cup onion, chopped

1/4 cup apple cider vinegar

Preparation

Peel and slice potatoes and boil until tender in salted water; drain. Meanwhile, fry bacon in a large skillet until crisp; drain on paper towel and crumble. Fry onion in remaining bacon grease until soft; add eggs and scramble until almost set. Season with salt and pepper and add vinegar. Pour over hot drained potatoes and toss with crumbled bacon.
