Ingredients

6 slices bacon

1/2 cup chopped onion

2 tablespoons flour

2 tablespoons sugar

1 1/2 teaspoons salt

1 teaspoon celery seed

dash pepper

1/2 cup vinegar

6 cups sliced cooked potatoes

2 hard-boiled eggs, chopped

Preparation

  1. In skillet, cook bacon until crisp; drain and crumble, reserving 1/4 cup bacon grease.
  2. Cook onion in the reserved bacon drippings, till tender, but not brown.
  3. Blend in flour, sugar, salt, celery seed and pepper.
  4. Add vinegar and 1 cup of water.
  5. Cook and stir until thickened.
  6. Stir in bacon, potatoes, and eggs.
  7. Heat through, tossing lightly.
