Ingredients
1 onion, eighths and separated
3 cloves of garlic lightly crushed
6 disks of ginger
3 chicken breasts
1/2 cup white wine
2 oz pork belly cut in 1 inch pieces
Preparation
- Crisp and render the pork belly pieces.
- Brown the chicken in the rendered fat with the pork.
- Add the onion and garlic and continue sauteing
- Add the wine and ginger and simmer. Should probably remove the chicken at some point to avoid over cooking.
- Season and add sweetener as necessary.
- Reduce the sauce to thicken.
- Serve chicken and onions over pasta or rice with sauce.
