Ingredients

4 small unpeeled zucchini

1 small red onion

2 peeled garlic cloves

1 t sesame oil

1T olive oil

1 T gluten free soy sauce

1 t peeled, minced fresh ginger

1 T toasted sesame seeds

Preparation

Toast sesame seeds. Set aside.

With mandolin, slice zukes thinly lengthwise to form ribbons. Set aside.

Peel and thinly slice red onion; mince garlic; grate or mince garlic. Set all aside.

Heat oils together over medium hight heat. Add onion and sauté until tender.

Add soy sauce, garlic and ginger and briefly sauté.

Adjust heat to medium; add zucchini ribbons and sauté for 5-7 minutes, until tender. Do not overcook

Remove from heat, place on serving dish, and sprinkle with toasted sesame seeds.
