Ingredients

1 cup brown rice flour

1/3 cup almond meal/flour

1 Tbs cornstarch

2 tsp baking powder

1/2 tsp salt

1 cup low-fat buttermilk

2 large eggs

1 Tbs canola oil

1 Tbs honey

1 tsp vanilla extract

Preparation

Whisk the flours, cornstarch, baking powder, and salt. Separately whisk buttermilk, eggs, oil, honey and vanilla. Combine dry and wet ingredients.

Place 1/4 cup on griddle
