Ingredients

2 C gluten free white bread flour

1/2 TBsp baking powder

1/2 TBsp baking soda

1/2 tsp salt

1 tsp Cinnamon

pinch nutmeg

2 medium sized eggs

1/2 C canola oil

1/2 C coconut milk

2/3 C white sugar

1/4 C honey

1 Tsp Vanilla extract

Blueberries or raspberries to taste

Preparation

Mix dry. Combine. Add oil and egg and coconut milk. Blend. Add rest. Blend until smooth. Cook at 400 (200 C) about 12-15 mins (small size) or 15-18 mins (larger size).
