Ingredients

2 cups oat flour

1/4 cup plus 3 tablespoons raw sugar

1 teaspoon baking powder

1/2 teaspoon salt

4 tablespoons vegetable shortening

1 mashed banana

1/2 cup soy milk

and 1 1/2 teaspoons vanilla extract. (For moist scones

add blueberries or other type of berries / fruit)

Preparation

mix all ingredients.

Roll out to 1-inch thickness; cut with a biscuit cutter.

Sprinkle lightly with raw sugar, and bake at 350° for 30 minutes, turning pan halfway through cook time.
