Ingredients
4 T butter
2 cloves garlic, sliced
4 sprigs fresh thyme
4 oz wild mushrooms (shiitake, porcini, etc)
1 C asparagus in 1" pieces
1/2 onion, cut up
1 C chicken broth, boiling
Salt
Pepper
9oz gnocchi, cooked
Parmesan cheese
Preparation
Cook gnocchi and set aside. Brown butter then add garlic, onions, asparagus, thyme and mushrooms. Cook until mushrooms are brown and soft (10 min) Add chicken broth and simmer until reduced by half (7 min) Add drained gnocchi and toss until well coated and not too liquidy. Sprinkle with shaved parmesan and serve.
