Ingredients
10 large eggs
1/2 c matzo cake meal
1/4 c potato starch
1 lemon
1 1/2 c sugar
Preparation
Preheat oven to 350 degrees. Cut a hole in wax paper to line the bottom of the pan. Separate eggs. Grate WHOLE lemon. Add lemon to egg yolks, stir until combined. Beat egg whites until stiff peaks form. Add sugar slowly. Add egg yolks slowly. Add cake meal and potato starch slowly. Pour into pan. Bake for 1 hour - do not touch or open oven. Done if toothpick comes out dry. Invert to cool completely before removing from pan.
