Ingredients
1 tsp salt
3 cups flour
3/4 lbs non salted butter
2 tbs sugar
1/2 cup heavy cream
2 egg yolks
1 tsp vanilla
Preparation
Leave butter out of fridge until softened Preheat oven to 350° Sift salt & flour together Cut in butter until mixture has consistent pea sized clumps Put 2 egg yolks in a measuring cup & add heavy cream to make 1/2 cup of liquid, add vanilla & blend together. Pour into a small sauce pan and gently heat until thickened. Add egg/cream mixture to flour mixture and mix lightly. Add more flour if necessary until mixture is roll-able if still slightly sticky. Roll out on a floured board until 1/2" thick Sprinkle with sugar Cut into narrow rectangles, then make 2 cuts into each 1/2 way through. With the cut side on top bend each of the short ends down to create an arch which opens up the cuts on the top to resemble a rooster’s comb Bake for about 10 minutes until lighly golden
