Ingredients

1 t salt

1 lb green beans, ends off

1 slice bread, no crust, 1 1/2 inch pieces

2 T sliced almonds, crumbled into 1/4 in. pieces

2 cloves garlic, minced

2 t parsley, chopped

4 T butter

Preparation

  1. Boil then blanch green beans.
  2. Process bread in food processor until fine.
  3. Transfer crumbs to pan, add almonds and brown. Off heat add parsley and garlic to hot crumbs and toss. Transfer to bowl.
  4. Melt butter in same skillet until browned and then toss with crumbs and almonds.
  5. Top beans with crumb mixture.
