Ingredients

2 Tbsp. dijon mustard

2 Tbsp. panko bread crumbs

2 Tbsp. fat-free milk

2 cloves garlic, minced

1 shallot, finely chopped (2 Tbsp.)

1 Tbsp. chopped basil

1/2 tsp. salt

1/2 tsp. ground pepper

1 lb. uncooked ground turkey

1 pint assorted cherry tomatoes

rolls or focaccia bread

1 tsp. lemon juice

Preparation

Combine 1 Tbsp. mustard with bread crumbs, milk, garlic, shallot, basil and 1/4 tsp. salt and pepper. Add turkey and mix well. Form into four patties.

Brush tomatoes with olive oil; roast tomatoes at 400 degrees for 20 minutes while burgers cook in a grill pan.

Spread remaining mustard on the bread, top with burgers and roasted tomatoes. Sprinkle with a few fresh basil leaves and lemon juice, as well as remaining salt and pepper.
