Ingredients

1 lb extra firm tofu (frozen overnight, then thawed)

2 Tbsp scallions, chopped finely

1 Tbsp minced garlic

4 Tbsp Olive Oil

2 tsp Thyme

2 lemons

Preparation

Slice tofu in 1/4"-1/2" thick slices Put 1 Tbsp Olive oil in skillet, heat on high Once olive oil sizzles, add salt to bottom of pan Rub Tofu slices into olive oil with salt & leave on pan Sprinkle garlic, chives, 2 Tbsp oil on top of tofu Flip when brown Salt other side

Serve with half lemon for each half pound (add as a drizzle over all tofu)

Compliments: green beans, spinach salad with yellow pepper & vinagraitte
