Ingredients

1# large shrimp in shells

1/3 cup orange marmalade

2 tbs lime juice

2 tbs peanut butter

1 tbs olive oil

1 tsp grated fresh ginger

1 clove garlic, minced

1/2 tsp coriander

1/2 tsp cumin

1/4 tsp turmeric

1/8 tsp red pepper

2 tbs coconut, toasted

Preparation

In a med. bowl whisk together marmalade thru red pepper. Reserve 1/4 cup. Cover shrimp with marinade and let set at room temp for 30 min., stirring occasionally

Drain shrimp, discard marinade. On 4 long metal skewers thread shrimp.

Grill uncovered directly over medium coal for 10 to 12 min. turning once.

Heat 1/4 cup marinade and spoon over shrimp and top with coconut.
