Barbecue Sauce:

3 tablespoons vegetable oil

1 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon ground cumin

1/8 teaspoon ground red pepper

3 tablespoons fresh lime juice

2 tablespoons water

2 tablespoons chopped fresh cilantro

2 tablespoons tomato paste

1 1/2 teaspoons honey

2 cloves garlic, minced

Salt, to taste

Can also use cherry tomatoes and eggplant

Preparation

Stir sauce ingredients together until smooth Chop vegetables into 1.5" squares and put on skewers Brush on vegetables before barbecuing
