Ingredients
1 pound 85-90% lean ground turkey
1 cup of rice
2.25 cups of water
1 onion, chopped
1 pepper, diced (any color, though we prefer red)
1 tomato, diced
1 cup cheddar cheese, grated
1 tbsp olive oil
3 chicken bouillon cubes
1 tsp mustard powder
Preparation
Chop onion and brown in a skillet (medium high heat) until golden brown. Add ground turkey and cook until no longer pink. Add mustard powder, rice, and water, stir, then set to simmer and cover, cooking for 20 minutes, or until the water is absorbed. Add pepper and tomato and cook at medium heat for another 3-5 minutes. Finally, top with cheddar cheese and serve when the cheese has melted completely.
