Ingredients

1 (8-ounce) package Neufchatel cheese, softened

1/4 cup plain yogurt

1 cup (4-ounce) shredded low-fat Cheddar cheese

3/4 cup finely chopped lean cooked ham

2 teaspoons grated green onion

2 teaspoons prepared horseradish

1 teaspoon country-style Dijon mustard

1/4 cup chopped fresh parsley

Preparation

  1. Combine Neufchatel cheese and yogurt in a large mixing bowl; beat at medium speed of an electric mixer until smooth. Add Cheddar cheese and next 4 ingredients; stir well. Cover and chill at least 1 hour.

  2. Shape cheese into a ball, and sprinkle with parsley. Press parsley gently into cheese ball. Wrap in heavy-duty plastic wrap, and chill. Serve with crackers.
