Ingredients

2 lbs potatoes (about 6 medium)

3 T butter

3 T flour

Salt & pepper

Cooked ham, cubed

2 1/2 C milk

1/4 C+ finely chopped onion

Grated swiss & cheddar cheeses

1 T butter

Preparation

  1. Heat oven to 350F.
  2. Peel potatoes and slice thinly (about 4 C).
  3. Melt 3 T butter in saucepan over low heat. Blen in flour and seasonings. Cook over low heat, stirring til mixture is smooth & bubbly. Remove from heat. Stire in milk. Heat to boiling, stirring constantly. Boil & stir 1 min.
  4. In greased 2 1/2 qt casserold, arrange potatoes in 2 layers, topping each with 1/2 the onion, ham and cheese and 1/3 of the white sauce. Top with remaining potatoes and sauce. Dot with 1 T butter. Cover; bake 30 mins.
  5. Uncover; bake 60-70 mins longer or til potatoes are tender. Let stand 5-10 mins before serving.
