Ingredients

3 cups shredded potatoes (buy the refrigerated ones, much easier than frozen)

1/3 c melted butter

1 c. bacon, or ham or sausage ( or use mushrooms and spinach - sauté first)

1 c shredded cheddar (I use mixture of cheddar and mozzarella)

1/4 c tomato chopped (I don’t always add this one)

2 eggs beaten

1/2 c milk

1/2 t salt

1/2 t pepper

Preparation

Press potatoes into bottom and sides of pie dish. Drizzle melted butter bake @ 425 x 25 min or browned

combo ham, cheese, tomato and spoon into shell combo milk, eggs, salt and pepper and pour over top bake @350 x 30 min
