Healthful Salad

Ingredients:

A handful of arugula leaves

1 glass of boiled quinoa ( either red black or white)

3 big Portobello mushrooms cut and roasted

10 Kalamata olives without seeds

2 radishes thinly sliced

2 spoons of roasted nuts ( sunflower, pumpkin, walnuts)

Purple onion rings

A few lentil sprouts and basil

4 roasted cherry tomatos

Orange and mustard marinade:

3 spoons of red grapefruit juice

3 spoons of fresh orange juice

3 spoons of fresh lemon juice

1 teaspoon of mustard

1 teaspoon of honey

6 spoons of olive oil

1/2 teaspoon of poppyseed

salt

Preparation

  1. Put all the ingredients of the marinade in a closed jar carefully sealed and shake forcefully.
  2. Shake all the salad ingredients, except from the onion beans sprouts and tomatos, with the marinade.
  3. Put the salad in a bowl and spread the bean sprouts tomatoes and onions on top.
