Ingredients

1 cup apple sauce

2 large eggs

3/4 cup sugar

1 cup white flour

1 cup whole wheat flour

3 Tbsp unsweetened cocoa powder

1 tsp cinnamon

1 tsp baking soda

1/4 tsp salt

2 cups shredded zucchini, squeeze a little water out

1 cup semi sweet chocolate chips

Preparation

Preheat oven to 350 degrees.

Combine apple sauce, eggs and sugar in a mixing bowl. Stir well to combine.

Add all the dry ingredients in a separate bowl, stir with a whisk. Add the dry ingredients to the apple sauce mixture. Mix well to combine.

Stir in the zucchini and chocolate chips. Pour into a greased 9x5-inch loaf pan and bake for 65-70 minutes (until toothpick comes out clean). Let cool in the pan for 10 additional minutes. Then let loaf cool on a cooling rack.
