Waldorf Salad
Ingredients:
1 apple, diced
1 cup celery diced small
Sea salt to taste
1 oz. raw walnuts chopped
4 Tbsp Avocado Mayo (recipe below)
9 oz. chicken breast (about two medium)
Avocado Mayo
Ingredients:
1 avocado, pitted and skinned
1 tbsp. lime juice or apple cider vinegar
1/2 tsp. sea salt
1/4 cup extra virgin olive oil
Preparation
- Boil chicken breasts for 20 min. or until no longer pink.
- While chicken is boiling, chop apple and celery.
- Drain chicken, blot dry and chop into bite sized pieces.
- Mix all ingredients, add avocado mayo and salt.
Avocado Mayo
- Put all but oil in a blender or food processor and pulse until combined.
- While processor or blender is running, slowly drizzle in the oil in a thin, yarn-thick stream. Continue until all of the oil has been combined and the mayo is dense and creamy. Note: Can be stored, covered, in the refrigerator for up to 2 weeks.
