Ingredients
14 oz. can Hearts of Palm
1 large tomato diced (or grape tomatoes)
2 avocados, cubed
6 tablespoons Lemon Juice (2 lemons)
½ cup mayo
Olive oil
Salt, Pepper
1 head or bag of lettuce
Preparation
Toss greens with lemon juice and olive oil. Drain hearts, discard liquid. Toss gently with tomatoes and avocados. Combine lemon juice, mayo, salt & pepper and mix into vegetables. Serve over greens
