Ingredients
4 Scallions, whites and greens separated
1/2 cucumber, peeled, seeded,and cubed
1/4 C fresh parsley
8 oz. cream cheese
pinch cayenne pepper
salt and pepper to taste
Preparation
- Finely chop whites of scallions and put into a bowl with the cubed parsley.
- In a food processor, pulse together the remaining ingredients.
- Mix together all ingredients.
- Serve in a bowl as a dip or spread onto toast triangles.
