Ingredients

4 Scallions, whites and greens separated

1/2 cucumber, peeled, seeded,and cubed

1/4 C fresh parsley

8 oz. cream cheese

pinch cayenne pepper

salt and pepper to taste

Preparation

  1. Finely chop whites of scallions and put into a bowl with the cubed parsley.
  2. In a food processor, pulse together the remaining ingredients.
  3. Mix together all ingredients.
  4. Serve in a bowl as a dip or spread onto toast triangles.
