Ingredients
3 tbls olive oil
2 tbls minced shallot
1 tbls chopped fresh rosemary
2 tsp chopped fresh thyme
2 garlic cloves, minced
4 skinless, boneless chicken breast halves
1/2 tsp salt
1/4 tsp black pepper
Cooking spray
Preparation
Combine olive oil, shallots, rosemary, thyme, and garlic in a resealable plastic bag. Add chicken breast halves, marinate for 2 hours. Remove the chicken from the bag; sprinkle with salt and pepper. Brush the herb mixture evenly over the chicken. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook for 6 minutes on each side or until done.
