Ingredients

1 can of diced tomatoes w green chilies

1 can of medium artichokes, drained

1/2 block pepperjack

1/2 block mozarella (or provolone, white cheese of some kind)

1/4c Parmesan cheese (grated or fresh)

1 package of frozen spinach

1/2 of a red onion, diced

Preparation

Melt in a pot on stove, stir continuously to avoid burning on bottom - I usually keep heat low and allow about a half hour for it to melt together.
