Ingredients
2 green onions
1 small zucchini
1 Tbsp. Olive oil
500 ml vegetable broth
100 ml whipping cream
2Tbsp. Horseradish
100 gram smoked salmon
Parsley or dill for decorating
Preparation
Slice the onion and dice the zucchini. Heat olive oil, add onion and zucchini cover for 2 min. add the broth and cook the zucchini for 8 min till soft. Pour vegetables and broth into blender till puréed. Pour into pan, add horseradish and whipping cream and add salt and pepper. Heat the soup a little. Cut the salmon in strips. Pour the soup in bowls and add salmon and parsley
