Ingredients

2 tablespoons olive oil or coconut oil

1 teaspoon coriander seed

1 teaspoon cumin seed

1 teaspoon curry

1 teaspoon turmeric

1/2 teaspoon salt

1 head cauliflower, washed and cut into florets

1/2 teaspoon grated fresh ginger

1/2 teaspoon grated lime zest

Preparation

Preheat oven to 450 degrees. Mix oil and spices together in a large bowl. Toss in cauliflower, mixing well so cauliflower is coated evenly. Spread on a foil lined cookie sheet and roast for 10-15 minutes or until crisp-tender. Remove from oven and toss with grated ginger and lime zest.
