Ingredients

Lamb:

1 1/2 rack of lamb

1 tsp garlic chopped

1 tsp ground fresh pepper

1 tsp kosher salt

Mash Potatoes:

4 ea red and yellow potatoes

1 tsp garlic chopped

1/2 cup soy milk or milk

1 tsp kosher salt

1 tablespoon butter/margarine

Preparation

Thinly chop potatoes and boil (thin cuts cook quicker). Drain, add milk/soy and other ingredients. Mash until desired consistancy Place on low heat, stiring occasionally

Slice lamb chops along bone to create lamb pops. Marinate overnight or just before cooking in above ingredients. Place in a cast iron skillet w/1tbs olive oil Sear 2-4 minutes each side

Serve w/mash potatoes in center of plate and 2-3 chops inserted into potatoes w/bone up. Garnish with cilantro or basil.
