Ingredients

FRUITS:

2 peak-ripe mangoes, chopped into 1/2 inch pieces

3 c. coconut meat from a home-prepared coconut

1/2 cup stemmed maraschino cherries,pitless

1 cup chopped pineapple

LIQUIDS:

1 cup fresh coconut water

1 8. oz can coconut cream

OTHER:

1/3 cup dark rum

2 tablespoons Malibu coconut rum

2 tsp. vanilla extract

Preparation

In blender, blend coconut meat, mango, cherries, and pineapple for 5 minutes on high. meanwhile in large ramekin. pour into mixture. blend on high for 30 seconds. chill in fridge for 2 hours 10 minutes. pour into 12 martini glasses.
