Ingredients

1 c. Israeli Couscous

2 c. Broth (vegetable or chicken)

2 TBSP olive oil

10-12 cherry tomatoes, quartered

1/4 English cucumber, seeds removed, diced

1/4 red onion or 2 shallots, diced

Dressing:

2 TBSP olive oil

2 TBSP apple cider vinegar

2 TBSP honey

Preparation

In medium sauce pan add 2 TBSP olive oil and Israeli couscous and saute for 2-3 minutes to bring out the aromas.

Add broth and lower flame to simmer for 10-12 minutes, until liquid almost evaporates completely.

Drain couscous, lightly rinse and add to bowl and set aside. Add tomatoes, onion and cucumber.

To make the dressing add all ingredients and whisk thoroughly. Add dressing to salad and toss.
