Ingredients
1 packet S&B Golden Curry or Vermont Curry mix
1 lb beef, pork, or chicken, cubed
4 carrots, peeled, cut into 1 inch pieces
2 celery stalks, peeled, cut into 1 inch pieces
2 large potatoes, cubed
1 large onion, chopped
1 large bell pepper, chopped
6 quarts water
Short-grain rice, to taste
Preparation
In large pot, brown meat over medium heat. Add onions & cook until translucent. Add potatoes to meat & onion mixture. Cook until bottoms of potatoes are just slightly brown.
Cover meat, onion, and potato mixture with water. Stir well. Mix in carrots, peppers, celery, and curry base.
Cover & let simmer for 30 minutes, stirring once after 15 minutes.
Serve over short-grain rice.
