Ingredients
2 tablespoons cocunut oil
3 slices bacon, roughly chopped
1/2 cup diced onion
10 oz bag kale, chopped
6-8 small boiling potatoes
1/2 cup coconut milk
1 cup beef broth
1/2 - 1 tsp Aleppo pepper
Preparation
Boil potatoes in salted water until almost done As potatoes are cooking: saute bacon in coconut oil till crispy add onion, saute till soft add kale and saute 5-7 minutes add broth, coconut milk, pepper, potatoes simmer till kale and potatoes are tender, adding more coconut milk or potato water if necessary
