Ingredients

Tuscan Kale, ribs removed, sliced down the middle and then across

Dried cranberries

Can of cannelini (white) beans

Juice of 1/2 orange

1t honey or maple syrup

1/2 shallot finely diced

2 T olive oil

Red Pepper flakes

1/2 t kosher salt

Mixed fresh ground pepper

Pumpkin seeds

Parmesan, thinly shaved

Preparation

Mix down to fresh pepper and refrigerate over night.

Add pumpkin seeds and shaved parmesan and serve.
