Ingredients

1 lb. ground turkey breast

1 large can Verdi enchilada sauce

1 jar medium salsa

1 tbs. chopped fresh cilantro

1 can drained, rinsed black beans

2 cups shredded fiesta cheese

8 count whole wheat tortillas

Preparation

Brown turkey with cumin and paprika and chili powder to season. Let cool and mix in salsa and I cup of cheese. Fill each tortilla and place in deep dish. Pour enchilada sauce over top so enchiladas are covered. Top with remainder of cheese and cover with aluminum foil. Bake at 350 for 30-40 min. Remove foil and bake until cheese is lightly browned.
