Ingredients

4-5 pounds of red, or russet potatoes

1 can (14 fl. oz) Trader Joe’s Coconut Cream, extra thick & rich

1 tablespoon Lemon Grass Paste

1/4 cup of Chicken Broth (add more for desired mashed potato consistency)

1/16 teaspoon Green Curry Paste (Thai Kitchen)

3 tablespoons salt (2 for the water, and 1 for the potatoes)

Preparation

Fill large pot with water and add 2 tablesppons salt. Turn on high heat until boiling, then reduce heat to maintain a medium boil. Prep Potatoes; red potatoes cut off brown spots, russet - peel entire potato. Cut into chunks and place in the pot. Boil potatoes until they are soft when touched with a fork, about 30 minutes. Strain the water out of the potatoes. Then add coconut cream, chicken broth, lemon grass paste, green curry paste, and 1 tablespoon salt (or to taste). Smash together until smooth.
