Ingredients
Meatloaf ingedients
1 lb ground turkey
1 lb ground pork
1 package stuffing for pork
2 eggs
1 cubanelle pepper diced
1/2 red onion diced
1/4 cub oregano
Gravy ingedients
3 quarts chicken stock
4 ham hocks
1 clove garlic
1 bunch ‘fresh poultry seasonings’
2 stalks celery quartered
1 bunch baby bok choy chopped
1/2 red onion quartered
3 tablespoons flour
Sauteed mushroom ingredients
1 lb sliced mushrooms
1/4 cub olive oil
1 cup chicken stock
Preparation
Prepare gravy Add all ingredients except flour into large pot and boil for approx 1.5 hours or until stock is reduced 1/3. Taste stock to determine desired flavor.
Strain stock and return to boil. Remove 1 cub boiling liquid and slowly add flour whisking constantly until smooth and thick. Add to stock to thicken.
Sautee mushrooms in olive oil high heat until golden brown. Add chicken stock and boil down 50%. Add mushrooms and liquid to gravy.
Prepare meatloaf. Sautee sweet pepper, 1/2 diced red onion until soft. Add oregano and lightly sautee for 2 minutes. Add to mixing bowl.
Mix all other ingredients in bowl, move to baking dish and form meatloaf. Bake approx 1 hour at 350 degrees or until cooked.
Serve with mashed potatoes or other favorite accompaniments. Serve gravy generously.
