Ingredients
Chocolate Macaroon Pie Shell
1/2 C crumbled chocolate macaroons
1/4 stick sweet butter, softened
Key Lime Filling
3/4C key lime juice
6 egg yolks
14 oz sweetened condensed milk
Kosher for Passover condensed milk-11/4C sweetened condensed milk = 1C instant nonfat dry milk, 2/3C sugar, 1/3 C boiling water & 3T margarine. Blend until smooth. To thicken, let set in refrig for 24 hrs
Preparation
Preheat oven to 350. Crush macaroons in food processor. Remove to medium size bowl. Add softened butter and mix well. Press mixture into bottom and up sides of 9" tart or pie pan. Bake @ 350 for 7 min until set. Cool.
In stainless steel bowl, whisk egg yolks w condensed milk and add in lime juice a few teaspoons @ a time stirring constantly. Pour mixture into pre-baked pie shell and bake in 325 oven for 10 min. Chill 1 hr.
