Ingredients

1 onion

6 cloves garlic

1 c butternut squash - cubed

1 c carrots - large cuts

1 red pepper -sliced (or roasted red pepper)

1 gr zucchini - sliced in half then large cuts

1 yl zucchini - sliced in half then large cuts

1 can roasted tomatoes (not if for lissie)

1 lb kielbasa sliced

1 lb chicken breast - cooked and cubed

chicken broth

white wine

balsamic vinegar

small cheese filled ravioli

parmesan cheese for garnish

additional spices - oregano, basil, parsley and red pepper flakes

Preparation

sauté kielbasa in soup pot inabit of olive oil remove from skillet and save in a bowl Saute onions and garlic in same pot for 5 min add squash and carrots, sauté for 5 mini add zucchini and pepper (if not already roasted), sauté for 5 min spoon vegies into a bowl add 3/4 cup white wine and deglaze - reduce to half add 4 cups chicken broth add veggies and kielbasa and cooked chicken bring to simmer and add chicken broth as needed season with balsamic vinegar and seasonings you like boil water in separate pot for ravioli add ravioli to soup or serve soup over ravioli in bowls Sprinkle grated Parmesan cheese
