Ingredients

1-1/2 lbs bonless country pork ribs, cut into 1" chunks

2-1/2 Tbsp sugar

4-1/2 Tbsp mushroom soy sauce (Pearl River Bridge is the best)

1/4 cup minced scallions

1 large garlic clove minced

1 Tbsp minced ginger root

2 Tbsp ground sesame seed (do it in a coffee grinder, but not too fine)

1/4 Tsp black pepper

2 Tbsp sesame oil

Preparation

In a medium bowl, toss the pork cubes with the sugar. Combine all other ingredients in a measuring cup and pour over the pork, tossing with your hands to make sure marinade is well-distributed. Marinate for at least an hour; lomger is possible but not necessary. Thread the pork onto bamboo skewers and grill over high heat about 10 minutes, turning once.
