Ingredients

1 c butter, softened

1/2c sugar

2 Tbsp grated lemon rind

2 c flour

Preparation

Cream butter. Beat in sugar until light and fluffy. Stir in rind, then flour until blended. Shape dough into 2 equal discs. Wrap and refrigerate for 30 mins. Between waxed paper, rollout dough to 1/4" thick. Cut with cookie cutter Bake at 300 for 17-20 mins
