Ingredients
1/2 tub ricotta (225g) *not light, whole milk is possible
Juice of 1/2 lemon & zest of the full lemon
4 tbsps kefir or high fat greek yogurt
1/3 c sugar
1 xl egg beaten into cheese mixture with pinch of salt
1 tsp vanilla
1/4 c salted butter (melted)
1/2 c milk
Mix & pour into dry ingredients .
1 1/3 c flour
3 tsps baking powder
Preparation
Quick mix (batter should be mixed but still lumpy). Let it sit for 15min or so for the gluten to get all yummy.. Fry on hot pan with 2 parts butter to olive / canola oil (so the butter doesn’t burn).
