Ingredients

3 C. flour

1 tsp. baking powder

1/4 tsp. salt

1 3/4 C. sugar

1/4 C. brown sugar

1 T. lemon jest

1 T. fresh lemon juice

1 C. butter (2 sticks)

2 large eggs

Sugar for sprinkling

Preparation

Sift flour, baking powder and salt. In Electric mixer add sugar, brown sugar lemon jest, lemon juice. Then add softened butter and mix for 2 minutes. Mix in eggs, one at a time. Scoop cookie walnut size and place 1-2 inches apart. Flatten with bottom of glass. Sprinkle with sugar. Bake until golden 10-12 min. or if larger cookie bake for 15 min. Bake until golden. May freeze to store.
