Ingredients
1 cup french green lentils
2 sliced shallots
3 diced carrots
1 cup sliced mushrooms
1 bay leaf
2 cloves of garlic
3/4 t grated lemon zest
2 T fresh lemon juice
3 T Olive Oil
1.5 t Dijon Mustard
1 t dried taragon
salt
pepper
Preparation
rinse lentils add lentils and smashed garlic and bay leaf with 2.5 cups of water to pot and bring to a boil when at boil bring to a simmer check after 15 minutes ready when chewable
pan fry shallots in olive oil reduce to low once clear add carrots and mushrooms and a few splashes of red wine
combine lentils and veggies remove bay leaf
add lemon vinaigrette to taste
