Ingredients

2 pounds chicken drumsticks and thighs, skin removed

3 pounds husked tomatillos

6 cloves garlic

2 serrano chiles

juice and zest of 3 limes

juice one 1 lime

1 bunch of cilantro

salt

handful of chopped scallions.

Preparation

Bring a large pot of water to a boil. Take the husked tomatillos, garlic, 2 serrano chiles and places them in boiling water for 2 minutes; drain well. Places them in a blender with the juice and zest of 3 limes and the bunch of cilantro and blend until just smooth.

Seasons well with salt and then put the sauce in a dutch oven with the raw chicken, bringing it to a boil and then simmering it for 25 minutes. Finish it with the juice of another lime and the handful of chopped scallions.
